Peanut Butter

My boys are a HUGE fan of peanut butter!!  One week, while money was tight, we were running out of their favourite spread!  But, I had several un-opened packets of peanuts in the cupboard!!  So, my fingers went to work on Google, and I soon found the solution!  Ever since then, I have not bought peanut butter, because the boys love it so much better!!  Seriously, this is awesome....and so quick and fast to make!!  And you can alter the recipe to appeal to your individual taste buds!

Ingredients:

  • 1 cup peanuts (your choice...raw, roasted, salted, unsalted)
  • Approx 1 tablespoon oil (preferably peanut oil)
  • Honey (optional)

Directions:

I love my Kenwood Hand Blender!!  If you have one of these (of something like it), you'll have peanut butter in no time!!  Honestly....it takes me about 60 seconds!!
  • Place one cup of peanuts in your food processor, and vitamize until you reach the desired consistency....smooth or crunchy.
  • To bring it into a paste (crunchy or smooth) add oil....drizzle in until you get the right consistency.
  • If you would like to add honey to the mix, do so BEFORE adding the oil.....and bring the paste up to the right consistency with the oil.
  • Keep peanut butter in the fridge.  Should last about 4 weeks....if it's not eaten by then!!  If the peanuts and oil separate, just mix before using.
Optional:

  • Run out of peanuts?  Why not try another sort of nut!!!
